Chef Edelman recommends using a microwave to melt the chocolate. She cautions that you need to frequently stir the melting chocolate as it can burn in the center.

She also recommends baking this cake in a water bath to distribute the heat evenly for this delicate cake.

The cake should be completely cooled before you turn it out of the pan. To make this easier, Chef Edelman advises first setting the cake pan on top of a range (electric or gas) for 10-20 seconds - just enough to make the sides pull away from the pan.

Really a perfect cookie any time of year. Chef Edelman recommends dipping the slightly cooled cookies (they should be a little warm) into the powdered sugar twice - 10 minutes apart - to ensure a good thick layer.
